Tahini Dill Salad Dressing
Servings: 6
Ready In: 10 minutes
Good For: Lunch, Dinner
Cuisine: Gluten-Free, Oil-Free, Vegan
Ingredients:
1/3 cup cashews (soaked overnight)
1/3 cup tahini
4 TBS lemon
1 garlic clove
1 TBS maple syrup
1/2 tsp sea salt
1/3 cup water
Handful of finely chopped fresh dill or 1 tsp of dried dill
Instructions:
In a blender, blend cashews, lemon juice, garlic, tahini, maple syrup, sea salt, and water until smooth.
Pour into a jar.
Next, with a fork, mix in dill.
Let dressing sit for 15 minutes to let flavors meld together. Tastes amazing in Veggie-full Quinoa Salad.
NOTES:
– Keeps in fridge for 5 days.
– If you don’t have soaked cashews, speed up the process by boiling them for 10 minutes to soften.
– For a thinner salad dressing, add an extra teaspoon of water at a time to final product and mix.
– To make nut free, omit cashews, and adjust recipe by using 1/2 cup of tahini, 1 finely minced garlic clove, 1/4 cup of water (tad less for thicker product), along with remaining recipe ingredients. Mix in jar, instead of blender.
