I’m getting busier by the day (anyone else homeschooling? And how’s that going?). Recipes like these give me the freedom to change it up, without losing time. Best of all, I bet you have most of the ingredients (maybe all) on hand.

These are perfect for your morning-fill because they’re not too sweet.

Berry Breakfast Squares Recipe

Servings: 9 squares

Ready In: 15 minutes

Cook Time: 30 minutes

Good For: Breakfast, Dessert, Snack

Cuisine: Vegan, Gluten-Free, Soy-Free

Ingredients:

  • 3 cups rolled oats

  • 1½ cups applesauce

  • 3 cups fresh or frozen mixed berries (or any other fruit)

  • 1/3 cup + 3 tbs maple syrup

  • 1 tsp lemon juice

  • 1 tbs chia seed

  • 1 tbs arrowroot powder, or sub tapioca starch

  • 1½ tsp cinnamon

  • 3 tbs date sugar

  • 1½ tsp baking powder

  • ½ tsp salt

  • 2 tbs almond butter (optional)

Instructions:

  1. Preheat oven to 375-degrees F.

  2. Line a 9×9 baking dish with parchment paper.

  3. In a food processor, pulse half of your oats briefly (about 30 seconds).

  4. Pour the pulsed oats into a large bowl, and mix with the other half of the oats, baking powder, cinnamon, and salt.

  5. Now add applesauce, almond butter, and ⅓ cup of maple syrup until the mixture is wet.

  6. Press half of the mixture into the bottom of the dish lined with parchment paper. Add a tad more for a thicker bottom.

  7. In a large bowl, mix your mixed berries, lemon juice, chia seed, arrowroot powder, and 3 TB of maple syrup and spread on top of your crust.

  8. Add date sugar to the rest of the wet oat mix, and crumble on top of your fruit layer. Press the mix a little so your top is mostly even.

  9. Bake for 30 minutes.

  10. Cool before slicing (it will look nicer lol), but go in if you can’t wait. It’ll still be yummy.

  11. Top it off with yogurt (or ice cream for dessert).

NOTES:

-Play around with the recipe. I used berries, but virtually any fruit works. So use what you have.

-Feel free to adjust the fruit filling sweetness to the desired taste.

-If you’re going for a more baked oatmeal feel, use more applesauce and bake a little longer. For more of a crunchy crumble layer, use less applesauce, and bake a little less.
